APPLE JONATHAN 
5-6 apples
2 tbsp. water
1 c. sugar
1/3 c. shortening
2 eggs
4 tsp. baking powder
1 tsp. salt
2 c. flour

Pare and slice apples thin. Place in baking dish with the water. Mix together the remaining ingredients and pour over apples.

Bake at 350 degrees for 30 minutes and serve with sauce.

SAUCE:

1 1/2 c. milk
1/2 c. sugar
3 tbsp. cornstarch
3 tbsp. raspberry jam
1 tbsp. butter

Cook sugar, cornstarch, salt and milk for about 5 minutes. Remove from heat and add butter and jam.

This is not the Apple Jonathan that I learned from my Great Aunt. She made this! Apples piled and thin sliced, placed one layer at a time! First starting with 1 cup of cinnamon sugar mixture (I added cup of brown sugar) I do 4 to 5 layers in a 6x9-inch pan. She made a biscuit recipe. I prefer to make a pancake recipe with same consistency. The left over sugar cinnamon is swirled in the pancake mix that has been put on top. Baked at 400°F for 15 minutes then back down to 350°F for 1 hour total. It is called Apple Jonathan because it is an up side down cake. So backwards of Jonathan apples. Once done it is served hot with ice cream on top. My aunt put nutmeg in hers but I deleted it because it is a strong spice. The reason it baked so long is that the apples caramelize. The cinnamon sugar is to taste. So rely on your tongue. More than likely this is a family recipe. I make it around Christmas.
