SUNSHINE SANDWICHES 
8 oz. can pineapple slices in juice
2 boneless skinless chicken breast halves, flattened
2 tsp. olive oil
2 whole wheat rolls or bread
2 slices Swiss cheese
Sunshine sauce (below)

Drain pineapple, reserve 2 teaspoons juice for sauce. Brown chicken in oil about 7 minutes. Cover while browning. Spread rolled with sunshine sauce. Top each sandwich with chicken, cheese, pineapple, lettuce and red onion, if desired. Serves 2.

SUNSHINE SAUCE:

Combine reserved juice, 3 tablespoons each dijon mustard, mayonnaise, 4 teaspoons lite soy sauce and 1 teaspoon honey.

I use to make this 10 years back and finally found the recipe again. This is an amazing sandwich. I save some teriyaki sauce to dunk sandwich. Delicious!
