LO-CAL SUNSHINE CHICKEN
SANDWICHES
 
2 boneless chicken breast halves, flattened
2 tsp. olive oil
2 rolls or 4 bread slices
2 slices low cal Swiss cheese
1 (8 oz.) can pineapple slices (save juice)

SUNSHINE SAUCE:

3 tbsp. Dijon mustard
3 tbsp. light mayonnaise
4 tsp. light soy sauce
1 tsp. honey
2 tsp. pineapple juice

Drain pineapple and save 2 teaspoons juice for the sauce. Brown chicken in the oil 7 minutes; cover while browning. Make sauce with the sauce ingredients. Spread rolls with sauce. Top with chicken, cheese, pineapple. Add lettuce and red onion, if desired. Serves 2.
