BANANA ORANGE MUFFIN CAKE 
1 1/2 c. all-purpose flour
1 c. Quaker Oats, uncooked
1/3 c. firmly packed brown sugar
1 tbsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt (optional)
2/3 c. mashed ripe bananas (about 2 sm.)
1/2 c. orange juice
1/3 c. butter, melted
1 egg, lightly beaten
1/2 tsp. grated orange peel

Grease bottom of 9 inch cake pan or springform pan. Combine dry ingredients. Add combined bananas, juice, butter, egg and orange peel. Mix just until moistened. Pour into prepared pan. Bake at 350 degrees for 30 to 35 minutes.

When cool put on icing: 1 tbsp. orange juice 1/2 tsp. grated orange peel

Drizzle it on.

Actually, 4 1/2 stars, but that was not a choice! It was the orange juice that got my attention. Because there are only 2 of us at home, I made 16 muffins out of this recipe at 350°F for 15-19 minutes. Watch for lightly browned tops and bottoms and test with a toothpick. I glazed them with 1 1/2 cups of powdered sugar mixed with 2 tbsp. of orange juice beaten well. Drizzle over them. What would make it 5 stars is that I think I need to add 1 1/2 tsp. of cinnamon to the dry ingredients. That always pairs well with orange juice. Thanks for a delicious recipe!
