RAISIN FILLED COOKIES 
FILLING:

1 c. ground raisins
3/4 c. sugar
2 tbsp. flour
1 tbsp. water
1 tsp. vanilla
1 c. hot water

Dissolve the 2 tablespoons flour in 1 tablespoon water. Combine ingredients and cook over medium heat until thickened.

COOKIE:

1 c. brown sugar
1 heaping c. lard (shortening)
2 eggs
1/4 tsp. salt
1/2 c. cold water
1 tsp. baking soda dissolved in cold water
3 3/4 c. flour (or enough for rolling out)

Cream sugar and lard. Add eggs and salt and beat. Add water, baking powder and flour to make a soft dough. Roll on floured surface approximately 1/8-inch thick. Cut with cookie cutter. Place 1 teaspoon filling on cut-out dough. Place another cookie on top and seal the edges. Bake on a greased cookie sheet for 10-12 minutes at 350 degrees. Yield: approximately 2 dozen.
