EASY (DATE OR RAISIN) FILLED
DROP COOKIES
 
2 c. fine cut raisins or dates
1/2 c. sugar
2 tbsp. flour
1 c. water
Pinch of salt
1/2 c. nuts
Little lemon juice

DOUGH:

1 c. shortening
2 c. brown sugar
2 eggs
1/2 c. warm water
1 1/2 tsp. baking soda
4 c. flour
1/2 tsp. salt

Cook filling until thick. Cool. Mix dough in order given (can chill). Drop dough by spoonfuls on cookie sheet, make impressions with wet spoon. Add 1/2 teaspoon filling, then put 1/2 teaspoon of dough on top of filling. Bake 10 to 12 minutes in a 350 degree oven.

NOTE: I usually grind the raisins.

The kids got raisins with their lunches everyday and refused to eat them. I needed to find something to do with them and this recipe is perfect! The kids loved them in the cookies... just not sure what to do with all the leftover raisin filling. Any ideas?
