DIRTY RICE 
6 cups rice
2 lbs ground beef /1/2 lb. beef liver
6-8 tbsp. olive oil
1 large onion, chopped
6 green onions, chopped
about 8 garlic cloves, minced
celery salt, to taste
black pepper, to taste
Tony Cachere's or Cajun seasoning, to taste

Cook rice according to package directions.

In a large pot, sauté all chopped vegetables and seasonings until opaque in color. Add ground beef/livers is done, chop/snip into tiny pieces. Combine vegetables and meat is incorporated mix with rice.

Season according with black pepper, celery salt and Cajun seasonings.

This is a nice basic recipe. I find that "dirty rice" lends itself to using up leftovers and whatever is in the refrigerator or freezer. Along with the onions and garlic I like to add mushrooms, celery, or carrots if I have them. The livers can be skipped and ground pork used instead (or in addition). Sometimes I throw in some frozen corn or peas. I also recommend using Penzey's cajun seasoning. But if you don't have cajun seasoning, just use chili, red pepper flakes, oregano, garlic, cumin, basil, cardamon or what ever spices you like. Cooking the rice in a nice beef stock also adds flavor. It's one of those recipes where you get to have fun and can never go wrong.
