BLACKBERRY COBBLER | |
FILLING: 1 1/2 c. water 1/3 to 1 c. sugar 1 tbsp. cornstarch 2 tbsp. lemon juice 3 to 4 c. berries TOPPING: 1 1/2 c. all-purpose flour 1 1/2 tsp. baking powder 1/4 tsp. salt (optional) 2 tbsp. sugar (optional) 4 tbsp. butter, at room temperature 2/3 c. milk 1 lg. egg To prepare filling combine first 4 ingredients in 2 quart saucepan. Add berries and bring to boil. Reduce heat, cover and simmer for 10 minutes. To prepare topping, sift dry ingredients. Cut fat into dry ingredients until crumbly. Add milk and egg and mix only until moistened. To assemble put filling into 2 quart or larger casserole dish. For dumplings drop separate spoonsful of batter on filling. For solid crust, drop dabs of batter evenly over filling and spread gently until covered solidly. Bake at 425 degrees for 20 to 25 minutes or until golden. |
