BANANA MUFFINS | |
1 egg 1/3 c. granulated sugar 1/4 c. cooking oil 3 sm. bananas, mashed 1 1/2 c. pkgd. pancake mix or Bisquick OPTIONAL TOPPING: 3 tbsp. brown sugar 1 tbsp. sour cream 1/3 c. nuts, chopped Mash bananas. In a medium bowl, STIR together egg, sugar, oil and bananas until well blended. Add pancake mix, stirring just until moistened. Line muffin tin with paper baking cups, fill 2/3 full. OPTIONAL TOPPING: Stir all together and drop 1 teaspoon on each muffin, before baking. Bake at 400 degrees for 12 to 15 minutes until golden brown. Makes 12 muffins. |
