FAT - FREE OATMEAL MUFFINS 
1/3 c. apple sauce
1 c. skim milk
1/4 c. egg beaters (there is 1 c. per carton)
1/3 c. brown sugar (packed)
1 tsp. vanilla
1 c. whole wheat flour (white flour can also be used)
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. rolled oats

In a medium bowl mix apple sauce, milk, egg beaters, vanilla and brown sugar. In another bowl sift flour, baking powder, baking soda and salt. Stir flour mixture into batter. Add oats. Mix well.

In a 12 cup muffin pan spray each cup with Pam. Fill each cup 1/2 to 3/4 the way full. Bake at 400 degrees for 20 minutes. Makes 12.

Nice! Hard to find a healthy, good-tasting muffin and this one fulfills! Used fruit pulp from juicer instead of applesauce and regular eggs. Moist, chewy, yum. My two-year-old likes them, so we're good to go! Definitely could double, muffins are on the small side, AND go rather fast.

I recommend using buttermilk (or adding a tsp of lemon juice or white vinegar per cup of skim milk) and soaking the oats in the milk for about an hour. Bring egg and applesauce to room temp while the oats are soaking. When mixing, use broad strokes with a big spoon and avoid over-mixing. All this helps with great muffin texture. I also used one regular egg. I count calories and these were just shy of 100 calories per muffin with a regular egg - nice ! This recipe takes any add-ins you like - we have tried dried cranberries (1/2 c per batch) and semisweet chocolate chips (1/4 cup per batch) for an additional 45 calories per muffin.
