OATMEAL CARROT MUFFINS 
1/2 c. oil
3/4 c. brown sugar
1 egg
1 tsp. vanilla
1/2 c. grated carrots
1/2 c. whole wheat flour
1/2 c. flour
1 c. rolled oats
1 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. cinnamon
1/4 tsp. nutmeg
Nuts, as desired

Combine oil, brown sugar, egg, vanilla and carrots. Mix well. In another bowl, combine dry ingredients. Stir into first mixture. Add nuts. Spoon batter into muffin papers in muffin tins. Bake in 400 degree oven for 15-20 minutes. Makes 12 muffins.

This recipe was very good. The kids loved it and its healthy :P however I put some heavy whipping cream that I had whipped the other day. My other son put cream cheese on his. Very yummy!

These were a little dry and could of used 1/2 cup brown sugar instead of 3/4 of cup. Will try 1/4 cup honey and 1/4 brown sugar next time.
