SPINACH, BACON, MUSHROOM PIE
(QUICHE)
 
1 (9") unbaked pie shell
1 (10 oz.) pkg. frozen chopped spinach, thawed
2 tbsp. Bacos
1 (4 oz.) can sliced mushrooms
1 (10 oz.) can condensed cream of mushroom soup (undiluted)
3 eggs, well beaten
1/2 c. milk

Preheat oven to 350 degrees. Thaw pie shell at room temperature for 20 minutes. In a bowl, mix remaining ingredients. Pour into shell and bake 35-40 minutes or until puffed and browned.

I thought this was really good! I made a few changes. I diced up some fresh mushrooms (4 oz.), used bacon bits to desired amount, and I only had cream of chicken and mushroom soup so I used that instead. It turned out really well!
