IMPOSSIBLE BACON PIE OR QUICHE 
12 slices bacon, crisply fired and crumbled
1 c. shredded cheese (Swiss or mild Cheddar)
1/3 c. chopped onion
2 c. milk
1 c. Bisquick baking mix
4 eggs
1/4 tsp. salt
1/8 tsp. pepper

Heat oven to 400 degrees. Grease 10-inch quiche dish or 10 x 1 1/2 inch pie plate. Sprinkle bacon, cheese and onion in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate. Bake until knife inserted between center and edge comes out clean, 35 to 40 minutes. Cool 5 minutes.

This was a great simple quiche recipe. Add whatever fresh summer veggies you have available. I added sautéd mushrooms, a small amount of spinach and thinly sliced onions. It was delicious!

This was GREAT! I did chopped ham and lima beans and cheddar cheese. Made a cheese sauce to spoon over the top. Very tasty and very easy. It was thick so it took about 60 minutes at 400°F.

I did ground beef, corn and diced tomatoes and Taco seasoning. It was very good!

This was very good. A great basic recipe to add whatever veggies or meat you want to. I did ground beef, corn and diced tomato and cheese and taco seasoning. I served a mild salsa over it. DELICIOUS!
