IMPOSSIBLE COCONUT CUSTARD PIE 
1/2 c. Bisquick
3/4 c. sugar
4 eggs
2 c. milk
1 can (3 1/2 oz.) coconut
1 tsp. vanilla
1 tbsp. butter, softened

Combine all ingredients and pour into 9 inch buttered pie pan. Bake at 400 degrees for 25-30 minutes until custard sets. Like magic it layers into crust, custard, coconut topping. Cool.

Love this recipe! I made it tonight for dinner with guests. My husband, however, would like it without coconut. Could it work "as is", just leaving coconut out of the recipe?

This is so easy and soooo good. Someone asked if you could leave the coconut out for a custard pie. You can bit you need to crumble in a slice of bread if I remember correctly. Just look under bisquick impossible custard pie to get the correct measurements. I wait until cool then drizzle with chocolate. I have also added lime juice for 1/4 of liquid, then added lime zest with coconut to give that lime and coconut twist.

Why not try coconut milk? If you use almond milk it won't be as creamy as real milk.
