COCONUT CUSTARD PIE WITH
BISQUICK
 
4 eggs, well beaten
1/4 c. butter, melted
1/2 c. Bisquick
1/2 c. sugar
2 c. milk
1/2 tsp. almond extract
1 c. flaked coconut

Mix first 3 ingredients together, then add rest. Mix well and pour into greased 9 inch glass pie plate. Bake at 350 degrees for 50 minutes.

Makes its own crust, custard filling in center and browned coconut on top. To test for doneness, place the point of knife in center. If knife comes out clean, it's done. Cool on cake rack.

The custard is created when you combine the eggs and the milk. There is no special package required :)

I enjoyed this pie at dinner on Christmas and was directed to this site in order to prepare it. I just baked my second pie and it is superb. It is a very simple recipe and the outcome is fantastic. I have not had coconut custard pie like this since my Grandma was alive. Instead of sugar I substituted Splenda. Great!

I have been making this pie for years. The only coconut I will eat. It is the same as in the blender. One of my recipes says to put the coconut on top of filling and then bake. I have made it both ways, both yummy!

I make this one and its amazing. I usually substitute the milk with pina colada mix and serve with whipped cream and pineapple. So good!!

I used a mixer to whip the eggs first, then used the mixer again to mix the final mixture. Other than that this was a really good recipe! Way too easy to be this good! Oh, I also sprinkled additional coconut on top after I had poured the mix into the pie dish. The next day I microwaved a slice for 30 seconds and had vanilla bean ice cream on the side. Delicious!!!
