AWARD WINNING SAVORY SPINACH AND
BACON QUICHE
 
2 cups chopped fresh baby spinach, packed
1 lb. bacon, diced and cooked crisp (thick cut applewood is preferred)
1/2 sweet onion, julienned and sautéed not caramelized
1 1/2 cups shredded Gruyere or Swiss cheese
1 (9-inch) deep dish frozen pie crust

CUSTARD MIXTURE:

6 large eggs, beaten
1 1/2 cups heavy cream (whipping cream)
salt and pepper, to taste
dash of onion powder
dash of garlic powder
dash of cayenne pepper
dash of freshly grated nutmeg

Preheat oven to 375°F.

Combine eggs, cream, and spices in a food processor or blender. Layer the spinach, bacon, onions and cheese in the bottom of prepared pie crust, then pour the custard mixture on top.

Bake at 375°F for 35 to 45 minutes until the custard mixture is set. Cool and cut into 8 wedges.

Serve with fresh cut fruit and get your quiche on!

Easy to follow and very good. Due to buying the wrong size pie crust I cut the recipe in half. Still tasty!
