SPINACH QUICHE LORRAINE | |
1/3 cup chopped onions 1/2 lb. bacon, chopped (about 8 slices) 1 cup Cheddar cheese 1 cup Swiss cheese 4 oz. cooked, drained spinach 3/4 cup dairy sour cream 1/2 cup almonds 1/2 tsp. salt 1/4 tsp. white pepper 5 eggs Prepared pie crust in an 8-inch quiche dish Combine bacon and onion in sauté pan and cook till bacon is crisp. Add almonds and continue cooking for 2 minutes. Drain on paper towels. Whip eggs with wire whisk for 1 minute till frothy. Stir in sour cream and whip again. Add seasonings, spinach and cheese and then bacon mixture. pour into prepared pie crust and bake for 25 minutes at 350°F or till puffy and brown on top. Submitted by: Karen LaValley |
