SPINACH PIE/QUICHE 
1 (10 oz.) box chopped spinach, cooked & strained
4 beaten eggs
1/2 cup oil
1 cup chopped onion
garlic clove, chopped
1/2 cup grated Parmesan cheese
1 cup Bisquick

Mix all ingredients.

Grease a pie plate (bread dish, etc).

Bake for 30 minutes @ 425°F.

I substituted cheddar cheese for the Parmesan and, to decrease the fat, used milk rather than the 1/2 cup oil. It turned out very well. Maybe it would have been 5 stars if I hadn't done these subs but, hey, we're really trying to keep our fat intake down.

I also substituted grated cheddar but left in a couple tablespoons of Parmesan. I chopped up and fried several pieces of bacon and added that in too. It was excellent.

This is a good recipe but it came out a little dry. I used a glass pie dish at 425°F. I think I'll lower the oven to 400°F next time. Good flavor-very easy-froze well and reheated well. Thanks Jeanne B.

THANK YOU, Jeanne!!! My wife used to make the greatest quiche using Bisquick. She died, unexpectedly, and never wrote her recipe down. I looked at Bisquick.com - NOTHING. So, today I was going to wing it. But I needed time and temperature. Went online, and the first recipe was Jeanne's. The ingredients are different but the concept is the same!! THANKS!

Simple recipe, really good! I added some diced tomato and used mozzarella cheese instead. Also, I have a gas oven, so it cooked a lot quicker; only needed about 15 minutes and still came out a tad dark. Great recipe though.

Warning I was distracted and didn't think to add salt and pepper. Add salt! This turned out more like a bread than quiche, I didn't measure the spinach and had a "bag" instead of a "box" so that may have been some of the problem, the Bisquick did not make a crust maybe because I had too much other stuff, I also added 1 lb of cooked bacon.

A box of spinach is 10 oz... I added mushrooms, used green and red onion, feta and Parmesan, an extra egg and 1/2 cup milk. Baked at 400°F for 45 minutes. Delicious!

Super easy. I love that it doesn't require a pie shell. I used shredded Monterey jack mix cheese because I didn't have any Parmesan on hand. I also sautéed the onions before hand because otherwise they bother me the rest of the night. It came out perfect!!! Thanks so much Jeanne B.!

I substituted 6 eggs instead of 4, diced red bell pepper, cooked and crumbled turkey sausage and two garlic cloves. I also cooked in a non-stick pie dish so I cut the time down to 25 min. Still came out a little dark- next time I'll only bake 18-20 min. But overall, a very quick,simple, versatile recipe that's very tasty- even my 7 yrs old agrees!

We were in a bit of a pinch for time. This is quiche style impossible pie. My significant other ate almost one slice and would not eat any more. Made the recipe as suggested and it was very dry and flavorless. Probably will not make again.
