FRENCH TOAST BREAD PUDDING
BRUNCH
 
5 eggs, beaten
3/4 cup milk
1 tablespoon McCormick® Pure Vanilla Extract
1/4 teaspoon baking powder
1 loaf French bread, cut into 8 (1-inch) slices
1 cup golden raisins
1 tablespoon rum
1/2 cup dark brown sugar
McCormick® Cinnamon Sugar

Combine eggs with milk and baking powder. Add vanilla extract.

Soak bread in mixture for several hours or overnight, turning once so that both sides are covered. Cover and refrigerate until ready to use.

Soak raisins in 1 tablespoon rum for 15 minutes (warm water may be substituted). Discard rum. Sprinkle raisins with enough Cinnamon Sugar to lightly coat. Butter a 13x9 inch baking pan. Sprinkle brown sugar evenly across bottom of pan. Sprinkle raisins on top of brown sugar.

Preheat oven to 450°F. Scoop soaked bread over brown sugar. Sprinkle with Cinnamon Sugar.

Bake for 25 minutes or until golden brown. Allow to cool 15 minutes before serving. Cut into squares and serve with a pat of butter.

I thought this would be a little more like bread pudding, but it turned out just like regular french toast. Outstanding!!! The brown sugar was a great touch. The edges of the bread were crusty and sugary (is that a word?). I think I would leave out the raisins next time. The night before I prepared the pan with nonstick spray and sprinkled the brown sugar. I put the bread & egg in a bowl in frig. and was ready to go in the morning. A definite keeper!!!!!

Best recipe! brown sugar on bottom creates a delightful gooey bottom.
A variation i would recommend would be to substitute the raisins for currants. The fruitiness of the currants is an interesting flavour. Rather than discard the rum, add it to some heavy cream as its being whipped for a naughty topping to this wonderful dessert.

This recipe was very easy to make and didn't require an abundance of ingredients. I only soaked the bread for an hour instead of overnight and it turned out great. I would definitely recommend this recipe because it tastes wonderful and is not time consuming.

Oh my God it is so good. I didn't have French bread but I had half a baguette and half cup raisins. Would be good with some walnuts. Highly recommended HIGHLY!

If using homemade French bread or heavy/stout French loaves, double the egg mixture otherwise it is too dry. Also would be better to mix raisins with bread mixture.
