SHOOFLY COFFEE CAKE 
2 c. complete buttermilk pancake mix
1/2 tsp. cinnamon
1/4 tsp. ginger
2/3 c. milk
1/3 c. molasses
1/4 c. sugar
2 tbsp. butter

In bowl combine pancake mix, spices, and mix well. Remove 1/3 cup of mix and set aside. Combine milk and molasses, add to dry mixture. Stir until moistened - do not over mix! Put into 9 inch pie plate. In small bowl, combine reserved 1/3 cup of dry mix and add sugar. Cut into crumbs and sprinkle on top. Bake at 350 degrees for 25 minutes.
