SKINNY SEGUIN'S WHOLE WHEAT PANCAKES | |
2 eggs 1/2 cup brown sugar 1 tsp. salt 1/2 cup vegetable oil 2 cups milk 2 1/2 cups whole-wheat flour 2 tsp. baking powder 1/2 tsp. baking soda Beat together eggs, sugar and salt. Add oil and beat until smooth. Add milk and mix. Mix together flour, baking powder and baking soda. Sift onto liquid mixture. Blend all together, not too thoroughly. Cook on medium-hot griddle (340°F for electric frying pan or griddle). Variation: Chopped fruit (apple, pear, etc.) or berries (blueberries, raspberries, etc.) to enhance flavor may be added to final batter. Submitted by: Skinny Seguin |
