ITALIAN CASSATA 
1 Sara Lee pound cake
Chocolate frosting

FILLING:

1 lb. ricotta cheese
1/4 c. sugar
2 oz. chocolate chips (the tiny ones)
1 tbsp. orange rind

First, cut the pound cake into 4 lengthwise layers. Next, using the back of a spoon, push the ricotta cheese through a strainer. Mix the remaining filling ingredients with the ricotta cheese. Carefully fold the miniature chips and orange rind into the filling mixture.

Assemble the cassata as follows: cake, filling, cake, filling, cake, filling, and cake. Chill overnight. Frost with a prepared frosting mix, or your favorite recipe.
