KYLE'S SPANISH RICE 
1/2 lb bacon, cut up in bite-size pieces
1 onion chopped
1 cup rice
1 can diced tomatoes
1/2 cup water
2 teaspoons salt
1 teaspoon cumin
2 teaspoons garlic
1 teaspoon chili powder

In a large saucepan, fry bacon until crispy. Add onion, rice and spices. Fry until rice is lightly browned and onions are nearly clear. Add diced tomatoes and 1/2 to 3/4 cup of water. Bring to a boil.

Reduce heat and simmer for 20 minutes or until rice is tender.

The rice did not fully cook. I'm not sure why so I'm attempting to fix the problem. The flavor is excellent though!

I hardly ever write reviews, but this one is fantastic. The only change I make is to add a green onion and add 2 jalapenos (without seeds) and cook along with the rice and spices. It is a staple in our house. So yummy!

Awesome Spanish rice!! I did add slightly more water After 15 minutes but that may be bc I used an almost full can of diced tomatoes I had in the fridge. This may have caused the liquid deficit. I printed the recipe so that I will be certain to find it again. :)
