“SPANISH RICE” IS IN:
NEXT RECIPE:  SPINACH ARTICHOKE DIP

SPANISH RICE 
1/4 to 1/2 cup vegetable oil
1-2 cup long grain rice
1/4 to 1/2 teaspoon salt
1-2 tomatoes, diced
1/2 to 1 small onion, diced
3-6 cloves garlic, minced
1-2 teaspoons cumin
2-4 tablespoons tomato paste
2-4 cup water, boiled

In a medium saucepan, over medium heat, fry rice in oil until slightly golden, about 3 to 5 minutes.

Add salt, cumin, onion and garlic and sauté 1 minute. Add tomato, tomato paste and boiling water. This should boil almost immediately; turn down heat to low, cover and cook for about 20 minutes, or until water has evaporated.

Serve.

This is exactly like how I make it, however I add a chicken bouillon cube and diced up green bell peppers. My grandma is full Mexican and this is the recipe she showed my mom, and that my mom showed to me. You have to have the chicken flavor and the green bell peppers! Also, you have to put 1/4 tsp of black pepper also! And I cook my rice a lot longer, until its golden brown (keeps it from getting all mushy).

Thank you - thank you for submitting this. Your recipe lists all the ingredients that would make this excellent. Will take Lola's advice and add green pepper & chicken bouillion. I have never been able to get the exact flavors I want - but think this has all the answers. PLEASE - submit any other great recipes you have.
