CORNMEAL GRIDDLE CAKES OR
PANCAKES
 
1 1/3 c. cornmeal
1 1/2 c. boiling water
1 tbsp. melted butter, butter or shortening
3/4 c. milk
1 tbsp. table molasses
2 eggs, well beaten
2/3 c. sifted flour
1 tsp. salt
4 tsp. baking powder

Let the griddle heat slowly. Pour the boiling water over the cornmeal and mix well, then let cool slightly. Add the melted butter, butter or shortening, milk, molasses and eggs and mix thoroughly. Sift the flour, salt and baking powder together and stir into the cornmeal mixture quickly. Drop by spoonful on the hot griddle. Brown on one side then turn and brown the other side. Serve piping hot.

Great recipe. I just did a little less than 1 tbsp of molasses, because I'm a bit sensitive to the flavor, and added 1 tsp of sugar to the flour, salt, baking soda mixture for a hint of sweetness. Not sure if either of these modifications did much, so the recipe might just be perfect. Great flavor and texture--moist yet light. Thank you!

P.S. I used self rising cornmeal and that made them light and not at all heavy.
