BANANA CARROT MUFFINS 
3 med. carrots
2 med. bananas
1/4 c. butter
1/2 c. brown sugar, packed
1 lg. egg
2 c. whole wheat flour
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. baking soda
1 tsp. vanilla
1/2 c. chopped walnuts

Preheat oven to 350 degrees. Grease a 12 cup muffin tin with butter or spray with PAM. Grate carrots and set aside. Mash bananas with fork and set aside.

In mixing bowl, cream butter and brown sugar until fluffy. Add egg and beat well. Stir in the bananas. In small bowl, mix together flour, baking powder, salt and soda. Add flour mixture to banana mixture. Do not overmix! Add carrots, vanilla and nuts and combine carefully. Bake 20 to 25 minutes.

These were okay. The mixed seemed a bit dry so I added about 2 tbsp natural applesauce. I also added 1 tsp cinnamon and now think I should have added more. Muffins did not have much flavor, but my kids do like them.

My husband likes to grab a few muffins when he heads to work to eat on his drive. Wanted something healthy. He liked these. The dough seemed really dry so I added a bit of applesauce. Plus for extra flavor, dash of cinnamon. The outside was perfectly crunchy, which he prefers.

I added applesauce, cinnamon and some nutmeg. I thought it was still too dry and very bland and needed more liquid. I won't make again.
