MANGO COOKIES 
½ cup butter
1 cup granulated sugar
¼ cup brown sugar
2 eggs
1 ½ tsp vanilla
1 ½ tsp cinnamon
a little over ½ cup mashed mangos
1 tsp baking soda
3 cups flour
a little over ½ cup of milk

Put milk, eggs, baking soda, 2 cups of flour, granulated sugar, butter, and mangoes in a large mixing bowl. Mix with mixer until creamy and altogether then add the vanilla, the rest of the flour, the cinnamon, and the brown sugar. Bake in a preheated 375°F oven for about 9 – 11 minutes or until they are golden brown.

Cool on wire rack and enjoy!

Love this recipe, always looking for ways to use Mangos my tree produces plenty large mangos. Perfect sweetness, I dropped them on an ungreased cookie sheet, they stuck a bit then I sprayed with Pam and they slid off and had a speck of cripness to the bottoms which made them more appealing to me. Done perfect in 10 minutes

Very tasty, my son loved. Not super sweet and considering the amount of sugar that's surprising, more of a muffin texture than cookie really. After initial batch I added some pecans and oatmeal. Very yummy.

Very good... Light and sweet! I substituted both sugars for Demerara, as usual. :) Could hardly taste the mango though... Probably because I used frozen mango-- the ice may have diluted it. Next time I would add more mango for sure, or use fresh. I would also double the vanilla... I used high quality Madagascar vanilla... Can never go wrong with that stuff!! ;)

These are the worst. Sorry folks. They don't taste like mango at all!!! I added more mango to the next batch, still not much mango flavor and these are like a cake type cookie, not a crisp cookie. I'm kicking myself for wasting 3 beautiful mangos on this recipe.
