CHOCOLATE CHIP OATMEAL COOKIES 
1 cup shortening
2 eggs
1 teaspoon vanilla
1 cup chocolate chips
1 cup white sugar
1/2 cup brown sugar
2 cups white flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 cups oatmeal
1/2 cup chopped pecans, walnuts (optional)
1/2 cup raisins (optional)

15 minutes before mixing cookies:

Soak raisins in warm water or rum. If using butter as shortening, remove from refrigerator to soften slightly.

Mixing the Cookies:

Cream shortening. Add sugars and mix. Add rest of ingredients except chocolate chips and oatmeal and mix.

Stir in oatmeal and chocolate chips.

Drop by tablespoonfuls onto a greased cookie sheet.

Bake for 10-12 minutes at 350°F.
