CHEESE, SHRIMP AND MUSHROOM QUICHE | |
3 slices bacon 1/3 c. mushrooms, freshly sliced 2 tsp. onions, finely chopped 1 c. Gruyere cheese, shredded 1/2 lb. shrimp, cooked and cut-up 1 tbsp. butter 5 eggs, lightly beaten 1/4 c. heavy cream 1/2 c. milk 1/2 tsp. white pepper 1 unbaked 9 inch deep dish pie shell Preheat oven to 350 degrees. Cook bacon in a medium skillet over medium heat until crisp. Remove bacon and drain on paper towel. Melt butter in a medium skillet, saute mushrooms and onions until tender. Crumble bacon into pie shell, sprinkle mushrooms, onions and shrimp evenly over bacon. Combine eggs, milk, cream, cheese and pepper in a medium bowl and beat well. Pour into pie shell. Bake until knife inserted into center comes out clean, about 35 to 40 minutes. Serves 4 to 6. |
