EASY MUSHROOM QUICHE 
1/2 lb. par-boiled mushrooms (well drained)
1 c. shredded Cheddar cheese
2 c. milk
4 eggs
1/2 c. Bisquick
1/4 tsp. salt
1/8 tsp. pepper

Heat oven to 350 degrees. Lightly grease 9 or 10 inch pie plate. Place mushrooms evenly over bottom of pie plate. Sprinkle 1 cup cheese over mushrooms. In blender, combine milk, eggs, Bisquick, salt and pepper on high speed for 1 minute. Pour into pie plate. Bake until golden brown, or until knife inserted comes out clean, about 50-55 minutes. Let stand 5 minutes before cutting. Serves 6. Leftover cooked vegetables may be added before baking, such as zucchini, spinach or broccoli.
