CREAMY BEEF STROGANOFF 
2 tbsp. butter
1 lb. boneless chuck, cut into thin strips
1 c. mushrooms, sliced
1 med. onion, chopped
1 c. beef broth
2 tbsp. tomato paste
1/8 tsp. garlic powder
Salt & pepper to taste
2 tbsp. flour
1 c. sour cream
1 (8 oz.) pkg. stroganoff noodles

In medium skillet, melt butter and brown beef. Add mushrooms and onion; cook until tender. Add broth, tomato paste, garlic powder, salt and pepper. Simmer covered, stirring occasionally for 30 minutes or until beef is tender. Stir in flour blended with sour cream. Bring to the boiling point, then simmer, stirring constantly, until sauce is thickened (about 5 minutes). Meanwhile, cook noodles according to package directions.

Ive made this for years its so easy and good. It was the first recipe I made for stroganoff, and I never found one I like better. I never used chuck, mostly sirloin. Lots of Italian parsley on top.

Fabulous! Loved the idea of using tomato paste for a little flair. I added just a few shakes of Worcestershire sauce as well. Of our 6 guests, all but one loved it! His taste buds are out of whack, I'm convinced! :-)

delicious and easy! A great recipe - though i find myself doubling it or tripling it quite often so that me and my family do not eat it all in one sitting! I prefer extra meat and less mushrooms but i find that the meat and mushrooms can easily be exchanged at 1 cup = 1 lb. I like to use beef chuck, though it's a little time consuming to cut up if you use a 5lb roast like I usually do. a really sharp knife goes a long way in making that task easy though. I always use egg noodles and add some Worcestershire sauce. I have not found any recipe better than this.
