“ORANGE POPOVERS” IS IN:

ORANGE POPOVERS 
2 cups sifted cake flour
1/2 tsp. salt
3 large eggs
1 tbsp. honey
3/4 cup milk
1 cup orange juice
1 tbsp. grated orange zest
1/2 cup chopped macadamia nuts or almonds (optional)

Preheat oven to 400°F. Grease tall muffin or popover pans well.

In a mixing bowl, whisk flour and salt together.

In a small measuring cup, beat eggs and honey with a fork.

Grate the orange zest, being careful to avoid the white, bitter inner portion of the rind. Add milk, orange juice, the grated orange rind (zest) to the eggs and honey. Beat for 2 minutes; stir in flour mixture and beat 1 minute more, or until perfectly smooth.

Bake 35-40 minutes for large popovers or 25-30 minutes for small popovers.

Serve with butter and maple syrup.

Serving Suggestion: Melt 1 cup large marshmallows in microwave. Scoop mixture into still-warm popovers. Top with mandarin orange segments. Add 2 tablespoons vanilla ice cream to make the mandarin orange juice creamy.

Tip: The popover batter may be easily prepared in a blender; process for 20 seconds and you're done! Popover batter may be prepared in advance and the popover pans filled and refrigerated for several hours before baking.
