“APPLE CAKE” IS IN:

APPLE CAKE 
This cake is easy to prepare and can be mixed in one bowl.

1 cup (2 sticks) unsalted butter
2 cups sugar
2 teaspoons vanilla extract
1 1/2 teaspoons ground cinnamon
dash of salt
1 cup buttermilk, yogurt, or dairy sour cream
4 eggs
1 tablespoon baking soda
1 teaspoon baking powder
4 cups all-purpose flour
1 (20 oz.) can sliced apples, drained (or 2 1/2 cups fresh)

Preheat oven to 350°F.

Grease and flour a 10-inch tube pan, tapping out excess flour.

Melt butter in a large, heavy saucepan over medium heat. Remove from heat and stir in sugar, Add vanilla, 1 teaspoon of the cinnamon, salt, buttermilk (or yogurt or dairy sour cream), and eggs. Whisk together flour, baking soda and baking powder. Stir in the flour mixture, just until well blended.

Spread half the batter in the pan in an even layer. Top with half the apples, Spread remaining batter over the tops of apples. Finish by spreading the top layer and arranging the remaining apples over the top. Sprinkle with 1/2 teaspoon of the cinnamon.

Bake at 350°F for 55 minutes, or until a toothpick inserted in center of cake comes out nearly clean.

Cool on a wire rack for 15 minutes. Remove from the pan and cool for 5 more minutes.

Makes 12 servings.

I've been looking for a good recipe for apple cake, and I've found it. I used it to make cupcakes (just mixed chopped apples -fresh granny smith as that's what I had- in at the end)- I baked them for 25 minutes and they came out perfect - nice texture. I did double the cinnamon as I like alot of cinnamon with my apple. I will top them with caramel butterceam frosting - mmmmm. Thank you CM for sharing.

Great recipe! Just made it. I like that its not over-the-top sweet...Its very yummy. A great dessert along side coffee :) one thing I do have to say is that my cake cooked at 350°F for around an hour and a half! even then, the center was still raw, so I had to raise the temperature a bit because my family was getting ansy waiting on the cake. Once the cake was finally cooked, it slipped right out of the pan! No problems whatsoever! What I did next, to add more moisture to the cake, was pour 1/2 cup of 100% apple juice over the cake. It absorbed it in no time...I put it in the refrigerator and now it is ready to be devoured! Thank you for sharing your recipe with us!
