CRAB MEAT SOUFFLE SANDWICH 
16 slices buttered bread with crusts removed
8 slices Swiss cheese
5 eggs
3 c. milk
2 tsp. salt
1 lg. can crab meat, shredded
Parmesan cheese

Butter large shallow baking dish. In it place half the bread slices (crusts removed). Lay cheese slices on bread and sprinkle with crab meat. Place remaining bread on crab meat. Beat together eggs, milk, and salt and pour over bread. Top generously with grated Parmesan cheese. Refrigerate overnight or at least 8 hours. Bake 1 hour at 325 degrees. Cut carefully and remove with spatula to serve. Garnish with watercress.
