![]() 2 cups sugar 2 teaspoons butter 1/2 tsp. vanilla 1 cup coarsely chopped nuts Melt sugar in a heavy iron frying pan over moderate heat, stirring constantly, until all lumps have disappeared and sugar is a rich golden color (hard crack on a candy thermometer; 300-310°F). Remove from heat, stir in 1/2 tsp. vanilla, add butter and pour over nuts which have been spread in a shallow, well greased pan. When cold, break into pieces.
