“PEANUT BRITTLE” IS IN:
NEXT RECIPE:  PEANUT BUTTER BALLS

PEANUT BRITTLE 
2 cups sugar
2 teaspoons butter
1/2 tsp. vanilla
1 cup coarsely chopped nuts

Melt sugar in a heavy iron frying pan over moderate heat, stirring constantly, until all lumps have disappeared and sugar is a rich golden color (hard crack on a candy thermometer; 300-310°F).

Remove from heat, stir in 1/2 tsp. vanilla, add butter and pour over nuts which have been spread in a shallow, well greased pan.

When cold, break into pieces.

Cooks Note: Use of a candy thermometer is recommended.

Hi Judy,

If you pour the brittle out onto a large surface where it will be able to spread, then the brittle will be thinner. Use a well oiled large cookie sheet and spread it quickly after pouring with a metal spatula.

Hi Jessica,

You can put them into a plastic bag and smash them into large pieces with a rolling pin or heavy pan, or just chop them with a cleaver or knife. A food processor will probably overdo it unless you have a small one.
