ROBIN'S PEANUT BRITTLE TREAT 
I have made this recipe with cashews and with pecans as well. Very yummy!

1 cup sugar
1/2 cup light corn syrup (Karo)
1 cup peanuts (the canned lightly salted ones work well)
1 tsp. vanilla
1 tbsp. butter
1 tsp. baking soda
popcorn
mini pretzels
dark or semi-sweet chocolate morsels

Pop popcorn (I almost forgot this once. You'll need the microwave for the peanut brittle).

Put a layer of wax paper on a cookie sheet and coat with non-stick cooking spray (Pam) or a thin film of butter. Arrange a layer of pretzels and popcorn on the greased wax paper.

Mix sugar and corn syrup in a microwave safe glass bowl. Microwave for 4 minutes. Stir well. Microwave for another 4 minutes.

Note: Be careful at this stage. If the sugar mixture even starts to turn color move on to the next step. This mixture is extremely hot and sticky.

Add the peanuts, butter and vanilla. Stir well. Return to microwave for 2 minutes. Remove from microwave and stir in baking soda. The mixture will foam up. Pour this as evenly as possible over the popcorn/pretzel mixture.

Note: It will begin to harden immediately so act quickly but be careful. Don't try to spread the mixture and don't worry if you don’t get all of the popcorn and pretzels covered.

Tip: All microwaves act differently. If the peanut brittle is chewy and sticks to your teeth it needs to go a little bit longer in the second cooking stage. If it turns dark it will be bitter and needs to be cooked less in stage two.

Melt the chocolate morsels in a double boiler and drizzle over the peanut brittle. Refrigerate until chocolate is completely hardened then break into pieces.
