MEXICAN CASSEROLE 
1 bag Doritoes
1 lb boneless, skinless chicken breast cooked and chopped
1 med. onion chopped
1 large can cream of chicken
1 can rotel tomatoes
2 cups shredded cheese (like Colby and Monterey)

Preheat oven to 350.

Cook chicken breast until done; save half of the juice. Cut into small pieces. Crush Doritoes and place half on bottom of sqaure pan. Put half the chicken on top of chips.

In small bowl combine chopped onion, cream of chicken, rotel tomatoes and the juice from chicken. Mix well. Add half of mixture on top of chicken.

Add just about two handfuls of chips to the top and then add rest of the chicken and mixture to the top of the chips. Top with the rest of the chips and then add cheese.

Put in the oven for 20 to 30 mins. until cheese is melted.

I have been making Mexican cassrole for years, I have some changes to try or add if you want, I use the nacho cheese kind of doritos, crunch them up for the bottom layer, then I boil the chicken breast, I use a taco seasoning, which makes the flavor awesome. Before the chicken I add cream of chicken, cream of mushroom, and two nacho cheese soup cans, mix the soups together then sprinkle mozarella cheese on top, add chicken, then add black olives. I then cover it with more doritos and use a thick cover of cheddar cheese on top of that. Bake at 350 for 10 to 20 mins or until cheese has melted. To finish it off I cook some Mexican rice, then put the casserole on top of that. Sometimes I add refried beans covered with mozarella cheese. This makes for a perfect dish evertime!

I also know it also as "kings ranch". It was passed from my husband from his mom and the kids love it!! That's always a plus!! And you can play with the mixture! Add or take away .. lots of options
