ASPARAGUS QUICHE 
1 can asparagus, drained
3 eggs
3/4 c. cracker crumbs (12 double)
1 c. cheddar cheese, cut into 1/4 inch cubes
3 tbsp. butter
1 tsp. salt
1/4 tsp. pepper
1 pimento or sm. jar cut in sm. pieces
1 c. milk

Cut asparagus into 2 inch pieces. Beat egg well; add salt and pepper, cracker crumbs, pimento, milk and cheese. Stir in asparagus. Put in greased 1 1/2 quart casserole or quiche pan. Melt butter, pour over top before putting in oven. Bake 350 degrees uncovered about 30 minutes. Can assemble ahead and add butter just before baking. Also very good baked and reheated before serving.

This Asparagus Quiche recipe is SO GOOD!!! And, it's so simple!! You don't miss not having a crust. Only thing, if you use Saltine crackers, you should reduce or eliminate the additional salt. Also cut asparagus into about 1/2" pieces. YUMMMM! Thank you!!!!

Had to halve the salt and double the pepper (i love pepper). I used fresh asparagus and they came out perfect! Slightly crunchy and everything was delicious. Even my 8 year old son liked!
