BREADED CUBE STEAK 
6 pieces cubed steak
2 eggs
3/4 c. milk
Progresso Italian bread crumbs

Mix eggs and milk. Dip steak in egg mixture and roll in bread crumbs. Bake at 400 degrees for 25 minutes.

I make what I call "Mexican Cube Steak... I dredge the steaks in flour and sear in fry pan using a bit of olive oil. Then I add a can of Enchilada Sauce to the pan and simmer until the steaks are fork tender...About an hour or so.. While steaks are cooking, I cut up some baby Dutch potatoes, pre-cook 'em in the Microwave and add to the pan of simmering cube steaks... let the entire thing blend flavors for a few minutes. Remove from stove top and sprinkle some Mex blend cheese over all... One of the hub's favorite meals. I have also used the 'green' enchilada sauce and it is surprisingly good.. You might have to add a bit more Enchilada sauce... if needed... -> Enjoy
