PINEAPPLE COCONUT ZUCCHINI BREAD | |
3 eggs 2 c. sugar 2 tsp. vanilla 1 tsp. salt 1 c. crushed pineapple, drained 1 tsp. baking soda 1 tsp. baking powder 3 c. flour 1 c. oil 1 tsp. cinnamon 2 c. grated zucchini 1 c. coconut 1 c. chopped nuts Combine eggs, sugar, vanilla and oil. Beat well. Add zucchini. Then add dry ingredients and fold into egg mixture. Blend in pineapple, coconut and nuts. Bake at 350 degrees for 1 hour. Makes 3 loaves. |
