PINEAPPLE COCONUT ZUCCHINI BREAD 
3 eggs
2 c. sugar
2 tsp. vanilla
1 tsp. salt
1 c. crushed pineapple, drained
1 tsp. baking soda
1 tsp. baking powder
3 c. flour
1 c. oil
1 tsp. cinnamon
2 c. grated zucchini
1 c. coconut
1 c. chopped nuts

Combine eggs, sugar, vanilla and oil. Beat well. Add zucchini. Then add dry ingredients and fold into egg mixture. Blend in pineapple, coconut and nuts. Bake at 350 degrees for 1 hour. Makes 3 loaves.

This recipe is totally delicious, but I found that the loaves did not hold together well and all three of them broke apart way too easily. Perhaps the recipe needs more flour. It also only took about 45 or 50 minutes for the loaves to be done.

So I made this recipe with 3 1/2 cups of flour and it took about 1 hrs 1/2 to bake .i had just taking it of the oven and my husband was eating it and he loved it so much he ate half the loaf right there.he ate the whole loave that day.i will bake this recipe again very soon
