“TURKEY TETRAZZINI” IS IN:

TURKEY TETRAZZINI 
1 lb. pasta, cooked
1/2 pound fresh mushrooms
1 stick (1/4 lb) butter
2/3 cup flour
1 large onion, sliced
5 cloves garlic, peeled and chopped
4 c. chicken or turkey broth broth
2 c. light cream
1/4 cup dry sherry
4 c. diced turkey, cooked
1 c. grated Parmesan cheese
1/3 teaspoon garlic powder
Salt and pepper to taste

Cook and drain pasta according to package directions. Slice the mushrooms 1/8 of an inch thick and sauté in 2-3 tablespoons of the butter, along with sliced onion, and chopped garlic until lightly browned. Combine the remaining butter with flour and add broth, stirring over low heat until thickened. Add the cream, salt, pepper, sherry, and garlic powder.

Divide the sauce in half. And one half of the turkey meat, and half of the mushrooms and cooked pasta. Butter a casserole dish and turn the pasta mixture into the casserole leaving a well in the center of the pasta.

Turn remaining cooked turkey and mushrooms into the center of the pasta mixture. Top with Parmesan cheese, and bake uncovered at 400°F for 20 minutes.

Optional: may also top with buttered breadcrumbs and grated cheddar or American cheese.

The directions in the second paragraph are grammatically unclear. I assume you add half of the sauce to the pasta and turkey mix, and half to the turkey which goes into the well, but that is not what the recipe says.It does not specify what happens to the second half of the sauce and mushrooms.

I apologize if my wording was not clear.

You can simply combine all of the ingredients, but the recipe aims to concentrate half of the turkey in the center with a better part of the pasta/sauce combination on the outer portion of the casserole so that the end result will appear to have a turkey 'filled' center in a casual sort of way.

This sauce is excellent and has a multitude of uses. It is thick but not too thick and very creamy. Plan to make and freeze for those emergency pasta dishes!!!
