TURKEY OR CHICKEN TETRAZZINI 
3-4 c. cooked chicken, cubed
1/4 lb. sweet butter
1/4 lb. sliced mushrooms
1 pt. whipping cream
1 tbsp. sherry
2 tbsp. dry white wine
Salt & pepper
2 tbsp. flour
2 tbsp. butter
1/4 lb. med. noodles
3 tbsp. grated Parmesan cheese (fresh if possible)

1. Melt 1/4 pound butter in skillet and saute mushrooms 2 to 3 minutes.

2. Add chicken, cream, wine, season to taste and heat to boiling.

3. Knead flour and 2 tablespoons butter together to smooth paste and stir into chicken.

4. Stir until smooth and thickened.

5. Simmer 5 minutes.

6. Cook noodles 7 to 10 minutes.

7. Spread noodles on bottom of oblong casserole and top with chicken mixture.

8. Sprinkle with cheese.

9. Bake in 375 degree oven 20 minutes or until golden brown.
