CAJUN MEATBALLS | |
1 lb. ground beef 3/4 c. seasoned bread crumbs 2 tbsp. finely chopped onion 1 tbsp. finely chopped shallots 1 tbsp. catsup 1/4 - 1/2 tsp. Tabasco sauce 1 tsp. horseradish 1/2 tsp. salt 1/2 tsp. Accent 1/2 tsp. pepper 1 tbsp. Parmesan 2 well beaten eggs Mix well. Form into balls 1/2 inch (cocktail size) or larger. Brown in a little hot grease. SAUCE: 1/2 c. catsup 1/4 c. chili sauce 1/4 c. vinegar 1/2 c. brown sugar 1 tbsp. finely chopped onion 1/4 - 1/2 tsp. Tabasco sauce 1 tbsp. Worcestershire sauce 1 tsp. Accent 1/2 tsp. dry mustard 1 tsp. salt 1/4 tsp. pepper Mix well. Bring to a simmer. Add meatballs and simmer about 15 minutes, a little longer if meatballs are large. |
