COCONUT ZUCCHINI PINEAPPLE BREAD 
3 eggs
2 c. sugar
1 c. oil
2 tsp. vanilla
1 sm. can crushed pineapple, drained
3 c. flour
1 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
2 c. grated zucchini
1 c. raisins
1 c. coconut (med. or flaked) OR 1 c. nuts

Beat eggs. Gradually add sugar. Add oil and continue beating. Add vanilla and beat until light and fluffy (foamy). Add pineapple.

In sifter, place flour, salt, soda and cinnamon. Add slowly to liquid mixture. Next add zucchini, coconut and raisins. Pour into 2 greased and floured pans (bread pans). Bake at 350 for 55 to 60 minutes. Cool 10 minutes and remove from pans.

Excellent recipe. I did use half wheat and half all purpose flour. Instead of a cup of oil, I used 1/2 cup applesauce and 1/2 cup of oil.
