JAMAICAN JUNGLE BREAD 
1 1/2 c. all-purpose flour
1 c. 3-minute brand quick oats
1/2 c. granulated sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/2 c. flaked coconut
1/2 c. toasted nuts, chopped
1 c. mashed bananas (about 3 med.)
1 (8 oz.) can crushed pineapple, undrained
1/4 c. vegetable oil
2 eggs

In large bowl, stir together first 9 ingredients. In medium bowl, mix bananas, pineapple, oil and eggs; add all at once to oat mixture. Stir just until liquid is absorbed and mixture is thoroughly moistened (do not overmix). Pour into greased 9 x 5 x 3 inch loaf pan. Bake at 350 degrees for 50 minutes. Cool in pan 5 minutes. Then remove from pan and cool completely. Makes 1 loaf.

GLAZE:

1/2 c. powdered sugar
1 tbsp. butter
1/2 tsp. coconut or vanilla extract
1 to 2 tsp. milk

Mix together. Drizzle over Jamaican Jungle Bread.

I made 2 loaves. One in a glass loaf pan and one in a metal loaf pan. The glass loaf pan made a much higher and prettier loaf. The metal pan had a flat top ...definitely not as appealing. Also, the glass loaf was a bit lighter in texture and the metal pan was a bit more dense. Both had great flavor though!

My family can't get enough of this bread, esp. my husband! The second go round I had to find a substitution for the oats, so I used Weetabix cereal, and it was just as delicious. I'm making two loaves right now to take to a party.

I made it with 1/4 cup wheat flour, Splenda and added carrots. Best banana bread EVER!

I love this recipe! Very simple and easy to bake. Always delicious! To make it a little more 'Jamaican' I add 1/4 cup of rum to the wet ingredients in place of some of the pineapple liquid(and sometimes a 1/4 cup in me). Then I brush some rum on top of the hot loaves as they come out of the oven. This bread tastes great year-round!

Oh! Yes!...has ALL the right ingredients - some of which are now going on my grocery list for upcoming week. Love the idea of the rum. HAS to be outstanding with nuts-coconut-banana - crushed pineapple. PLEASE - submit any other great recipes you may have.

Would rate this 50 stars - if possible. I did take another's suggestion about adding rum. I had very old bottle of Malibu - Caribbean rum with coconut liqueur. Did also brush fresh rum over the hot loaf - when I removed from oven. Outstanding. This would be excellent any time of the year - but also a great holiday treat.
Be prepared - you will be asked for the recipe.

Don't mean to continue reviews - but "new idea"... am going to prepare this again - but add maraschino cherries a little juice, maybe also add small amount into the glaze. Yum!
