CHICKEN NOODLE OR CHICKEN RICE
SOUP
 
3 carrots, sliced
3 celery stalks, sliced
1 med. onion, chopped
1 whole chicken
4 chicken bouillon cubes
Salt
Pepper
Garlic
2 or 3 bay leaves
8 oz. any type noodles OR 1 c. rice

Remove skin from chicken and discard. Take insides out of chicken and place in a large saucepan. Break chicken apart and put in saucepan also. Cover with water and cook through (1-2 hours). Remove all chicken parts. Put broth in refrigerator to cool. Strip chicken from bones and cut up. (Brown additional chicken if desired to add to soup.) Place all ingredients EXCEPT noodles or rice in a large pot. Add about 2 quarts of water. Skim fat off broth and add to pot. Cook for approximately 1 hour. About 15 minutes before serving, add noodles or rice.
