SUNDAY SPECIAL COFFEE CAKE 
TOPPING:

1/2 c. sugar
1/4 c. sifted all-purpose flour (sift before measuring)
1/4 c. butter, softened
1 tsp. cinnamon

BATTER:

1 1/2 c. sifted all-purpose flour (sift before measuring)
2 1/2 tsp. baking powder
1/2 tsp. salt
1 egg
3/4 c. sugar
1/3 c. butter, melted
1/2 c. milk
1 tsp. vanilla extract

TOPPING: In small bowl, combine sugar, flour, butter and cinnamon. Mix lightly with fork, until crumbly. Set aside. Preheat oven to 375 degrees. Grease an 8 x 8 x 2 inch pan or 9 x 1/2 inch layer cake pan.

PREPARE BATTER: Sift flour with baking powder and salt; set aside. In medium bowl, with rotary beater, beat egg until frothy, then beat in sugar and melted butter until well combined. Add milk and vanilla. With wooden spoon, beat in flour mixture until well combined. Pour into prepared pan. Sprinkle topping evenly over batter. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool partially in pan, on wire rack. Cut into squares or wedges while still warm. Makes 9 servings.

I've been making this for years but couldn't find my recipe. Delicious! I add half the batter and sprinkle a little of the topping on then add rest of batter and top with remaining streusel so it's more distributed. If the butter is a little harder in the streusel it won't melt when baked so keep it cold instead of softening. Thanks for letting me have my cake again!
