“CHEWY GRANOLA COOKIES” IS IN:
NEXT RECIPE:  CHEWY OATMEAL COOKIES

CHEWY GRANOLA COOKIES 
1 3/4 cups all-purpose flour
1 3/4 cups firmly packed brown sugar
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon baking soda
1 cup (2 sticks) butter, softened
2 eggs
1 teaspoon vanilla
3 1/2 cups granola cereal

Pre-heat oven to 375°F

In large bowl, stir together flour, brown sugar, salt, cinnamon and baking soda.

Stir in remaining ingredients except granola; mix until smooth. Stir in 3 cups granola.

Drop dough by rounded teaspoonfuls, roll in remaining 1/2 cup granola.

Place two inches apart on lightly greased cookie sheet. Bake for 10 to 12 minutes or until golden brown.

Yield: 5 dozen

I used cranberry granola from Great Harvest Bread Co. and my family just loves it! We did use more granola than 1/2 c. to roll the spoon-fulls in, but they are great.

Not bad... added a cup of raisins and only 1 cup of sugar. Need about 1 cup of granola to roll the entire dough. Didn't make 5 dozens though... about 2 1/2 or so (larger cookies?). Great cookies and very yummy. Will do again. thanks!

These cookies were far too plain for my taste :/ I had to sprinkle on some regular white sugar after they were done baking. I'm sure they would be good with coffee or hot chocolate though.

Thanks for a great recipe that almost met my requirements for having all the ingredients in the house!

I didn't have butter so substituted a combination of 1/2 cup olive oil, 1/4 Karo syrup, and 2 tablespoons of orange juice. Turned out great!

Great cookies! Added a little maple extract and chocolate chips and substituted 1/2 cup crisco for 1/2 cup butter for a more cake-like cookie! Thanks for the idea!

I used a designer oatmeal I picked up from Home Sense and it gave it a great twist. I would suggest using a tad less salt if you do that. All in all an easy wonderful cookie!

The batch is currently baking right now. Instead of making the cookies, I put in a 9x9 pan, and made bars.. Hopefully they come out as good as the dough has!

Perfect base for adding dried fruits or chocolate or whatever flavor sounds good. This batch is big enough that you can even split the dough to make both.
