CHEESE BACON & ONION QUICHE 
1 single crust basic pastry, unbaked
6 slices bacon, cut into 2" pieces
1 sm. onion, chopped
3 eggs
1/2 c. milk
1/2 c. heavy cream
1 c. shredded Swiss cheese
1/2 tsp. salt
1/8 tsp. pepper

Line quiche or pie pan with pastry. Cook bacon until crisp. Drain; place in pie shell. Saute onion in bacon fat until lightly browned. Drain off fat. Off heat, stir in eggs, milk, cream, cheese and seasonings. Pour into pastry lined pan. Bake in preheated 375 degree oven for 25 minutes. Serve hot, warm or cold. Yield 4 servings.

Ty I tried this and it came out awesome.Now I was wondering if I could use a deep dish pie shell and also substitute the 1/2 cup of cream and make it a full cup of milk?

I made this recipe for an event with a little cafe fundraiser. I hadn't tried it, but it looked easy and had the ingredients I wanted. I didn't get to try it! I did hear that one person raved about it and said it was the perfect combo. I did substitute green onion for the chopped onion. Will be making this again!
