CHEESE BACON AND ONION QUICHE 
9 inch pie crust, unbaked
6 slices of bacon, cut into 2 inch pieces
1 sm. onion chopped
3 eggs
1/2 c. milk
1/2 c. heavy cream
1 c. shredded Swiss cheese
1/2 tsp. salt
1/8 tsp. pepper

Cook bacon until crisp. Drain; place in pie shell. Saute onion in bacon fat until lightly browned. Drain off fat.

Turn off heat to pan and stir in eggs, milk, cream cheese and seasonings. Pour into pastry lined pan.

Bake at 375 degrees for 25 minutes or until knife plunged into custard comes out clean. Serve hot, warm or cold.
